Healthy poached salmon recipe for Christmas

We know, Christmas isn't really the time for low-fat, low-calorie food. However, if you are wary of overindulging during holiday, we bring you something healthy yet lip-smackingly delicious food recipethat you will simply love. Keep the holiday dinner light and healthy with this whole poaches salmon recipe with lemon. It's so light, nice and easy to make that it will surely make for a spectacular centerpiece at your dinner tables and will easily feed all the hungry months. So what are you waiting for. Ingredients

1 whole salmon 2.5-2.75kg/4lb 15¼oz-6lb 1oz

1 onion, chopped

2 bay leaves

4 tbsp white wine vinegar

1 lemon, quartered

sea salt

cracked black pepper


Instructions

Place the salmon in a fish kettle or a large roasting tin.

Pour enough cold water to cover the fish. Toss in some onion, bay leaves, vinegar and lemon and a good pinch of salt and a little black pepper.

Cover with a lid, or tin foil, and bring to the boil. Once it is boiling, turn off the heat and allow the fish to stand in the water until cool.

Carefully transfer the salmon onto a board. Gently scrape off the skin and place the fish on a large flat serving dish. Serve with a bowl of lemon wedges and a bowl of hollandaise.
