Nothing is better than having a chilled ice-cream on a hot and sweaty afternoon. Though the outside heat may not discontinue, but the inner body will feel good as you take each bite. It is a favorite among all age group, unless it is prohibited due to medical reasons. Next time you need and ice-cream, make it yourself instead of buying it!
Try this simple yet delicious homemade ice-cream
Ingredients:
Coconut milk-2cans
Light brown sugar-1cup
Kosher salt-1/2teaspoon
Vanilla extract-2teaspoon
6 egg yolks
Method:
Combine 1 can of coconut milk, brown sugar and the salt in a saucepan. Set it over a mediuom flame and bring it to boil. Stir in between so that the sugar dissolves.
Reduce the heat when the mixture starts boiling and continue to cook for 20-30 minutes till the mixture looks dark in color. It should look like thick caramel.
Then add second can of coconut milk to the content and stir to combine.
Break the egg yolks in a large bowl and whisk it along with 1 cup of hot caramel mixture.
Now pour the whisked egg content into the leftover caramel mixture and cook it for 1-2 minutes. Remove from heat and pour into a bowl. Finally add vanilla extract. Cover tightly and refrigerate it.
Freeze for at least 4 hours before serving.
