Tomato sauce is that ubiquitous condiment that we love to dip our samosas and pakodas into, slather over our pizzas, parathas and sandwiches, and pour over our pastas, noodles and omelettes. Tomato sauce has countless uses and can turn a bland, boring food into something totally lip-smacking. And the best part — you can make a batch at home using fresh tomatoes in a few simple steps. Ingredients:

4 cloves garlic, peeled and finely sliced

1 bunch fresh basil, leaves picked and torn

3 x 400 g good-quality tinned plum tomatoes

salt

freshly ground black pepper

1 tablespoon ginger
-
1 tablespoon oregano
-
olive oil
Instructions:

In a non-stick frying pan, heat some olive oil.

Add the garlic and stir for half a minute. Now add the basil and the tomatoes and cook until the tomatoes turn mushy. Squash the tomatoes with the back of your ladle as much as you can.

Add salt and pepper and boil.

Remove the pan from the heat, allow it to cool and blend the contents until smooth.

Boil the paste with some ginger and oregano, and then simmer it for five minutes.

Cool and store in air-tight jar.
