However, when an occasion demands for something truly special, we suggest you turn your fresh, seasonal fruit into a showstopping dessert with an upside-down cake. Talking about upside cakes, nothing bets the retro delight — a traditional pineapple upside down cake made by caramelizing the fruit with a lovely sticky, gooey sauce that runs over the light sponge cake. A classic desert worth reviving. This old-fashioned cake is traditionally made in a cast-iron skillet, but if you don't have one, you can substitute a 9- or 10-inch cake pan. We bring you an eggless recipe of pineapple upside down cake that even the vegans and vegetarians can enjoy. Read on.
Ingredients:
Canned pine apple slices
Cherries
Sugar - 4 tbsp
Butter - 2 tbsp
Water - 1 tbsp
All purpose flour (maida) - 250 gms
Cooking soda - 1/2 tsp
Baking powder - 1 tsp
Butter - 100 gms
Milk maid - 200 ml
Water - 50 ml
Milk - 100 ml
Pineapple essence - 1/2 tsp
Yellow food color - a pinch
Directions:
To prepare the caramel, heat butter and sugar in a pan until melted. Pour water and stir and under medium flame until the sugar caramelizes to light brown color. Remove from flame and immediately pour it into a round baking pan.
Take out the pineapple rounds from the syrup, arrange them on top of the caramel poured in the baking pan along with cherries and put aside.
For the cake, sieve the flour, cooking soda and baking powder together.
Take a mixing bowl and beat butter and milkmaid until smooth. Add pineapple essence and food color and whizz until well-blended. Fold in the flour, baking powder mixture alternating with milk and water and mix again.
Pour the batter over the arranged pineapples slowly and even the top with a spatula.
Preheat oven to 180°C and bake the cake for 30-40 mins.
Invert the cake immediately on the wire rack and allow it to cool down to room temperature. Enjoy!
