Which festivities doesn't call for sweets! Be it Christmas, Diwali or even Sankranti, no festival is complete without its supply of scrumptious sweets. Today we bring you the recipe of a traditional Bengali sweet and a Sankranti favorite “Paatishapta” (crepes stuffed with coconut). Read on for the recipe and treat your loved ones to this delightful sweet.

Ingredients

For the batter:

1 cup refined flour

1/2 cup semolina

1/4 cup rice flour

1 1/2 to 2 cups milk

Oil

For the filling:
3 cups grated coconut / khoya
2 Tbsp sugar / jaggery
3-4 green cardamoms

Instructions

For the filling:

In a wok, cook grated coconut or khoya with sugar or jaggery over low flame. If adding khoya,

make sure to add little milk.

Add cardamom.

Stir the mixture till sticky. Take off from fire and let it cool.

For the patishapta:

Take flour, semolina and rice flour in a bowl.

Pour milk and mix and keep aside for half an hour.

Heat a non stick pan and drizzle little oil. Pour a thin layer of the mixture on it and spread it quickly with the ladle.

Put the filling lengthwise at the center of it and roll it. Wait till it turns light brown.
Place it on the plate. Serve.

Tip: You can pour condensed milk or thickened milk over it before serving.
