Add some spunk to your drab midweek dinner with something simple yet sumptuous like a chilled potato salad tossed in yummy barbecue sauce. With the winters here, getting hold of some fresh crop of baby potatoes won't be much of a difficulty for you. Just boil them until done and toss them with your favore dressing and a dash of herbs and you are good to go. For the recipe, read on.
Ingredients
10-12 baby potatoes, boiled and peeled
1 spring onion, cut into chunks
3-4 capers
2-3 gherkins
1 tsp chopped parsley
1 tbsp mayonnaise
Salt, to taste
Pepper, to taste
2 tsp barbeque sauce
Instructions
Take the cooked baby potatoes, spring onions, capers, gherkins, chopped parsley, mayonnaise, salt and pepper in a bowl and mix well.
Add the bbq sauce and toss well again.
Serve chilled.
