Here is an ‘all in one’ recipe with gobhi, paneer, palak. The Gobhi Paneer Palak Parathas will give you loads of vitamin A and C and even zinc. It is a good source of nutrients for veges. Try this delicious dish and get the goodness of vegetables.

Ingredients required for Gobhi Paneer Palak Parathas

• Dough
• Plain maida flour: 3/4 cup
• Whole wheat flour: 3/4 cup
• Chopped spinach: 1/2 cup
• Lemon juice: 1/2 tsp
• Oil: 1/2 tsp
• Salt to taste

Ingredients for Stuffing

• Grated cauliflower: 1 cup
• Crumbled paneer (cottage cheese): 1 cup
• Chopped coriander (dhania): 1/4 cup
• Finely chopped green chilies: 2 tsp
• Finely chopped ginger (adrak): 1/2 tsp
• Salt to taste

Other Ingredients
2 tsp oil for cooking

Method of preparation of Gobhi Paneer Palak Parathas

• Mix spinach, lemon juice, water in blender to get smooth puree. Use salt to sieve the flavors. Add ghee, mix well. Add puree and knead till you get semi-soft dough.
• Divide the dough and stuffing into 8 equal parts. Roll one part of dough and put some stuffing in the center. Seal edges, roll out again to get a thick paratha.
• Now place the paratha on pan and use half tea spoon oil to cook it on medium flame. It should turn brown on both the sides. Repeat the steps with remaining parts of dough.
• Serve hot with fresh curds.
