Methi Aloo is an preparation loved by people in Northern region of India. Made with fenugreek leaves and potatoes, this healthy recipe is a great favourite of most households in the Northern, Eastern and Western parts of the country.
Ingredients
500 gm Fenugreek leaves, finely chopped
250 gm small Potatoes
1 tsp Fenugreek seeds
3 whole Red Chillies
2 tsp Coriander powder
1/2 tsp Chilli powder
1/2 cup Mustard oil
Salt according to taste
Method
Step 1. Take a deep kadhai or non-stick pan. Pour the mustard oil and heat it before putting the potatoes. Cook in medium heat for a few minutes until the potatoes are half cooked. Remove from oil and keep them aside.
Step 2. Next increase the heat and add the whole red chillies and fenugreek seeds into the oil. Add the finely chopped fenugreek leaves and mix properly. Keep stiring till the leaves appear glossy.
Step 3. Now it's time to add the half cooked potatoes, mix well. Then add coriander powder, chilli powder and salt, and mix properly. Do not cover. Keep cooking till the leaves are done.
Methi Aloo tastes best when served hot with chapati or rice.
