Do you love potato fry? It is very simple to prepare and so you can try to prepare yourself. And the Baby potato fry recipe gives a different taste altogether compared to usual potatoes. You may serve baby potato fry as a side dish with rasam-rice, sambar-rice or dal-rice or also with chapati.
Ingredients required for Baby potato fry recipe
Baby potatoes, boiled and peeled: 250gm
Cold processed sesame oil: 1 tbsp
Mustard seeds: ½ tsp
Cumin seeds: ½ tsp
Sliced pearl onions/shallots or chopped onions, 8 to 9 pearl onions or 1 small onion
curry leaves; pinch of asafoetida
Turmeric powder: ¼ tsp
Red chili powder, add as required
Sambar powder: 1 tsp
Chopped coriander leaves
Method of preparation of Baby potato fry
Steam 250 grams washed baby potatoes, in a steamer or pressure and cook for 2 wistles. Peel and keep aside. Heat oil in a pan and keep the flame low. Add mustard seeds, cumin and sauté. Add onions, curry leaves and pinch of asafetida. Stute till onions turn transluscent. Add peeled potatoes and stir. Add the spice powders - turmeric powder, red chili powder, sambar powder or coriander powder, and garam masala powder. Mix evenly and add salt. Saute in low flame and add chopped coriander leaves. Switch off the flame.
